Raw Tomato Soup
Red Hot Raw Tomato Soup
Makes 4 servings.
Raw soups make an excellent lunch, side dish with dinner or just an awesome snack in between meals. The beauty of these soups is how easy they are to make and clean up afterward. For best results you are going to want to use a high speed blender such as a Vitamix or Blendtec. Any regular blender will work too, you will just need to be more patient.
4 large tomatoes
4 tsp extra virgin olive oil
1 red bell pepper
1 tsp peeled and grated ginger root
4 green onions
1/8 tsp cayenne powder
A pinch of cinnamon
With a high speed blender you can add all the ingredients in at once and blend away. If you’re using a regular blender I suggest you start by blending the tomatoes and olive oil first until they are smooth. Now you can slowly add the rest of the ingredients. When the soup is finished all the ingredients should be blended smooth. This soup can be served as is at room temperature or you can refrigerate it first. For a more familiar feeling to the soup you can warm it slightly on the stove until it becomes warm to the touch.
The soup can be made thicker or thinner depending on your desired consistency. To make it a bit thicker add more tomato and to make it thinner just add some filtered water.
